Eileen Joyce

Congratulations to Eileen Joyce for receiving the Master of Science in Holistic Nutrition degree with a Summa cum Laude designation. Eileen also holds a master’s degree in electrical engineering from the University of Southern California, and worked as an avionics system’s engineer with defense contractors and the US department of defense.

She decided to pursue a master’s degree in Holistic Nutrition from Hawthorn University when her family moved, after living for several years in Europe, back to the convenient fast foods in North America. Eileen saw gradual yet devastating changes in her children’s health. Not knowing what to do with these changes, she decided to get back to basics and cook homemade meals like she used to serve her family. She was amazed at the profound effect that food had  on her family’s health and happiness.

At the time of choosing a thesis topic, Eileen encountered a number of women with a myriad of health problems while taking hormonal contraception. These women were prescribed antidepressants and anti-anxiety pills to alleviate their symptoms. There seemed to be no understanding between the side effects of hormonal contraception and symptoms women were experiencing. To find out whether or not there were negative health effects for women as a result of taking hormonal contraception she did extensive research and submitted her thesis entitled Hormonal Contraception and Women’s Health. Good work, Eileen!

Walter Chavez

Walter Chavez is to be congratulated for graduating from the Wise Traditions Nutrition certificate program with the Magna cum Laude designation. Walter also earned a Bachelor of Arts degree from Stony Brook University, Stony Brook, New York in Multidisciplinary Studies. After joining the Weston A. Price Foundation, enjoying the recipes in Sally Fallon's cookbook, and realizing his passion for nutrient-dense food he chose Hawthorn to further his knowledge of food preparation, exercise, and nutrition. In addition, Walter wanted to gain a clearer and deeper understanding of traditional diets to teach others of the health benefits of traditional diets. Best of luck, Walter!

Amanda Codd

Amanda Codd received her Master of Science in Holistic Nutrition with the distinction of Magna cum Laude. Amanda has been formally trained as a research neuroscientist. She received a B.A. from the University of Pennsylvania in 2001, and an M.Phil. from Trinity College at the University of Cambridge, England, in 2003. Since then, she has worked in many scientific capacities, including a cognitive neuroscience research lab studying the effects of meditation on the brain. Amanda is currently working as a clinical writer for a non-profit healthcare research institution, ECRI Institute, in Plymouth Meeting, PA. In this role, she analyzes evidence on emerging healthcare technologies. Her interests in holistic nutrition stem from her interests in neuroscience and involve the effects of food on the brain, and the effects of the brain on food choices. Great work, Amanda!
