Andie Kolbeck

Andie Kolbeck received her Master of Science in Holistic Nutrition degree, Summa cum Laude. Andie also holds a Bachelor of Arts degree in Medical Anthropology and Global Health from the University of Washington and has completed a two-year program at the California School of Herbal Studies. She has nearly a decade of experience in the natural food and supplement industry, most recently acting as an educator and product manager for a company producing organic herbal extracts. She is currently studying for her Holistic Nutrition Credentialing Board exam, and hopes to work in private clinical practice or as a program developer and educator for community healthcare centers. In the meantime, she has been keeping busy volunteering as a nutrition educator for Cooking Matters, a nonprofit that teaches basic cooking and nutrition skills to low-income adults, and acting as a research intern for Livzo, a new corporate wellness platform and chronic disease management app that relies heavily on diet tracking technology. Rebekah Taylor

Congratulations to Rebekah Taylor for graduating from the Scientific Foundations of Holistic Nutrition certificate program. Rebekah's personal journey towards health led her to Hawthorn in her quest to learn more about nutrition. She especially enjoyed the flexibility of online study and the "pay as you go" benefit that would be the foundation of her new vocation to help others find alternative methods to conventional medicine. Rebekah wrote, "I want to be able to have the knowledge behind me to help my friends and family understand why nutrition is important and how if effects our lives. This is my journey to help others, and be the healthiest person I can be and I’m excited that Hawthorn University can get me there." You are on the right path, Rebekah. Keep up the good work!

Kay McAleer

Kay McAleer graduated cum Laude from the Master of Science in Holistic Nutrition program. Kay has a Bachelor's degree in Psychology and Exercise Science from California State University Chico and also holds a second degree in Health Science and Physical Education from California State University Sacramento. She has a passion for learning and improving health and entered Hawthorn to expand her knowledge in the emerging field of holistic nutrition so that she could assist others in health and nutrition counseling in the private sector. She was a Health Educator in the public schools, an Aerobic Instructor, and worked in a rehabilitation exercise program at a local community college focusing on monitoring heart rates and blood pressure. Kay's thesis is entitled Nutrition Strategies for the Treatment and Prevention of Breast Cancer. Best of luck, Kay!

Karen Erwin

Congratulations to Karen Erwin for graduating Summa cum Laude from the Master of Science in Holistic Nutrition program. Karen also holds a Bachelor of Arts degree in Arts Management from East Carolina University. She is fascinated with holistic health and nutrition and entered Hawthorn to learn how food can be one's medicine and to learn as much as possible to expand her knowledge of nutrition and assist others to value their health and change destructive habits that impede a healthy life. Karen would love to see more healthy food choices offered at local grocery stores and see food manufacturers continue to work on offering items with reduced sugars and other added chemicals. She is a believer in the adage of “do what you love” and her unfolding career in the field of holistic nutrition is her passion. Her thesis is entitled How a Standard American Diet can Impact the Immune System and Contribute to Chronic Inflammation. Best of luck, Karen!

Mallory Olney

Congratulations to Mallory Olney who earned Magna cum Laude honors upon her graduation from the Nutrition Consultant certificate program. Mallory also holds a Bachelor of Science in Biology from the University of Nevada, Reno and is currently studying Chinese Medicine (MAcOM) at Oregon College of Oriental Medicine. After working as a biologist for several years, she began to focus on the two fundamental building blocks of health: thought and food. In 2013, she became a certified yoga instructor through Sivananda Vedanta International. Through her personal journey to find a healthy and balanced lifestyle through food, she realized her true passion for health and helping others reach their optimum health through diet and lifestyle. She recognizes that each person is biochemically individual and that everyone is different and requires individualized treatment plans to reach a state of optimal wellness. Mallory supports lifestyle changes, such as stress reduction techniques to properly digest and assimilate foods and educates others about real, whole, nourishing foods that can lead to better health. Her interest lies in digestive issues and all areas of nutrition and health. Best of luck, Mallory!
